Fried quinoa

Ingredients:
– yellow, red, orange bell pepper
– purple onion
– basil
– parsley
– salt
– onion powder
– turmeric
– baby Bella mushrooms (I didn’t use them in this pic)
Instructions:
– cook 2 cups quinoa in boiling 3 cups water for 20 mins
– heat oil and cook veggies until desired doneness (add onion powder, salt, parsley, basil & turmeric while cooking)
– when quinoa is done add to skillet with oil and fry for 5-7 mins
– once quinoa is done add veggies and cook another 10 mins (add all seasonings again)
