Fresh snapped green beans & potatoes

Ingredients

  • 1 pound fresh green beans, snapped and washed
  • 4 medium potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon red pepper flakes for a bit of heat
  • Optional: 1/2 pound bacon or ham, diced (for added flavor)

Instructions

  1. Prepare the Ingredients:
    • Snap the ends off the green beans and break them into bite-sized pieces.
    • Peel and cube the potatoes.
    • Chop the onion and mince the garlic.
  2. Cook the Bacon or Ham (Optional):
    • If using bacon or ham, heat a large pot over medium heat and cook the bacon or ham until crispy. Remove the meat from the pot and set aside, leaving the drippings in the pot.
  3. Sauté the Onion and Garlic:
    • Add the olive oil or butter to the pot (if not using bacon or ham drippings) and heat over medium heat.
    • Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Add the Broth and Vegetables:
    • Pour in the chicken or vegetable broth.
    • Add the cubed potatoes and green beans to the pot.
    • If using, add the red pepper flakes.
  5. Cook the Vegetables:
    • Bring the mixture to a boil, then reduce the heat to low and cover the pot.
    • Simmer for about 20-25 minutes, or until the potatoes and green beans are tender.
  6. Season and Serve:
    • Season with salt and pepper to taste.
    • If using, add the cooked bacon or ham back to the pot and stir to combine.
    • Serve hot and enjoy!

Tips

  • You can add other vegetables like carrots or corn for additional flavor and nutrition.
  • For a vegetarian or vegan option, use vegetable broth and skip the bacon or ham.
  • This dish can be served as a side or a light main course.
