Fresh snapped green beans & potatoes
Ingredients
- 1 pound fresh green beans, snapped and washed
- 4 medium potatoes, peeled and cubed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- Optional: 1/2 teaspoon red pepper flakes for a bit of heat
- Optional: 1/2 pound bacon or ham, diced (for added flavor)

Instructions
- Prepare the Ingredients:
- Snap the ends off the green beans and break them into bite-sized pieces.
- Peel and cube the potatoes.
- Chop the onion and mince the garlic.
- Cook the Bacon or Ham (Optional):
- If using bacon or ham, heat a large pot over medium heat and cook the bacon or ham until crispy. Remove the meat from the pot and set aside, leaving the drippings in the pot.
- Sauté the Onion and Garlic:
- Add the olive oil or butter to the pot (if not using bacon or ham drippings) and heat over medium heat.
- Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the Broth and Vegetables:
- Pour in the chicken or vegetable broth.
- Add the cubed potatoes and green beans to the pot.
- If using, add the red pepper flakes.
- Cook the Vegetables:
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for about 20-25 minutes, or until the potatoes and green beans are tender.
- Season and Serve:
- Season with salt and pepper to taste.
- If using, add the cooked bacon or ham back to the pot and stir to combine.
- Serve hot and enjoy!

- You can add other vegetables like carrots or corn for additional flavor and nutrition.
- For a vegetarian or vegan option, use vegetable broth and skip the bacon or ham.
