Easy No Pasta Lasagna Recipe

Ingredients:
- 2 large zucchinis, thinly sliced lengthwise (about 1/8 inch thick)
- 1 lb (450g) ground beef (or ground turkey/chicken)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can crushed tomatoes (or 2 cups fresh diced tomatoes)
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 2 cups ricotta cheese (or cottage cheese)
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- Fresh basil (optional, for garnish)
Instructions:
- Prep the Zucchini:
- Slice the zucchinis thinly lengthwise. Place the slices on a paper towel and sprinkle lightly with salt. Let them sit for 15 minutes to draw out excess moisture. Pat dry with a paper towel.
- Cook the Meat Sauce:
- In a large skillet, cook the ground beef over medium heat, breaking it apart as it cooks. Add the chopped onion and garlic, and sauté until the onion is soft and translucent.
- Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Let the sauce simmer for 10-15 minutes, allowing the flavors to meld together.
- Prepare the Cheese Mixture:
- In a bowl, mix together the ricotta cheese, egg, and half of the Parmesan cheese. Season with a pinch of salt and pepper.
- Assemble the Lasagna:
- Preheat your oven to 375°F (190°C).
- In a 9×13-inch baking dish, spread a thin layer of the meat sauce on the bottom.
- Layer the zucchini slices on top of the sauce, slightly overlapping.
- Add a layer of the ricotta cheese mixture, followed by a layer of shredded mozzarella cheese.
- Repeat the layers until all ingredients are used up, finishing with a layer of mozzarella cheese on top.
- Bake the Lasagna:
- Cover the lasagna with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for another 10 minutes, or until the cheese is golden and bubbly.
- Garnish and Serve:
- Let the lasagna cool for a few minutes before slicing. Garnish with fresh basil if desired.
