Easy No Pasta Lasagna Recipe

Ingredients:

  • 2 large zucchinis, thinly sliced lengthwise (about 1/8 inch thick)
  • 1 lb (450g) ground beef (or ground turkey/chicken)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can crushed tomatoes (or 2 cups fresh diced tomatoes)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 2 cups ricotta cheese (or cottage cheese)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • Fresh basil (optional, for garnish)

Instructions:

  1. Prep the Zucchini:
    • Slice the zucchinis thinly lengthwise. Place the slices on a paper towel and sprinkle lightly with salt. Let them sit for 15 minutes to draw out excess moisture. Pat dry with a paper towel.
  2. Cook the Meat Sauce:
    • In a large skillet, cook the ground beef over medium heat, breaking it apart as it cooks. Add the chopped onion and garlic, and sauté until the onion is soft and translucent.
    • Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Let the sauce simmer for 10-15 minutes, allowing the flavors to meld together.
  3. Prepare the Cheese Mixture:
    • In a bowl, mix together the ricotta cheese, egg, and half of the Parmesan cheese. Season with a pinch of salt and pepper.
  4. Assemble the Lasagna:
    • Preheat your oven to 375°F (190°C).
    • In a 9×13-inch baking dish, spread a thin layer of the meat sauce on the bottom.
    • Layer the zucchini slices on top of the sauce, slightly overlapping.
    • Add a layer of the ricotta cheese mixture, followed by a layer of shredded mozzarella cheese.
    • Repeat the layers until all ingredients are used up, finishing with a layer of mozzarella cheese on top.
  5. Bake the Lasagna:
    • Cover the lasagna with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for another 10 minutes, or until the cheese is golden and bubbly.
  6. Garnish and Serve:
    • Let the lasagna cool for a few minutes before slicing. Garnish with fresh basil if desired.
