🧀 Cream Cheese Spinach Puffs
Ingredients (Makes 12 puffs)
For the Filling:
- 1 tablespoon olive oil or butter
- 2 cloves garlic, minced
- 1 cup frozen spinach (thawed and well-drained)
- 4 oz cream cheese, softened
- ¼ cup grated Parmesan cheese
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Optional: pinch of red pepper flakes or nutmeg
For the Pastry:
- 1 sheet frozen puff pastry, thawed
- 1 egg (for egg wash)
- Optional: sesame seeds or poppy seeds for topping

Instructions
Step 1: Preheat & Prep
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
Step 2: Make the Filling
- Heat olive oil in a pan over medium heat.
- Sauté garlic for 30 seconds until fragrant.
- Add thawed spinach and cook for 2–3 minutes to evaporate any excess moisture.
- Let it cool slightly, then mix with cream cheese, Parmesan, salt, pepper, and any optional spices.
Step 3: Assemble the Puffs
- Roll out the puff pastry on a lightly floured surface.
- Cut into 12 squares (about 2.5 to 3 inches each).
- Place a spoonful of spinach mixture in the center of each square.
- Fold corners over the filling to form a loose pinwheel or a triangle; press gently to seal.
- Beat the egg with a tablespoon of water and brush the tops of each puff.
- Sprinkle with optional seeds.
Step 4: Bake
- Bake for 15–18 minutes, or until golden and puffed.
Tips:
- Be sure your spinach is very well drained to avoid soggy puffs.
- You can add shredded mozzarella or feta for extra cheesy flavor.
- These can be made ahead and frozen (unbaked or baked).
