🧀 Cream Cheese Spinach Puffs

Ingredients (Makes 12 puffs)

For the Filling:

  • 1 tablespoon olive oil or butter
  • 2 cloves garlic, minced
  • 1 cup frozen spinach (thawed and well-drained)
  • 4 oz cream cheese, softened
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: pinch of red pepper flakes or nutmeg

For the Pastry:

  • 1 sheet frozen puff pastry, thawed
  • 1 egg (for egg wash)
  • Optional: sesame seeds or poppy seeds for topping

Instructions

Step 1: Preheat & Prep

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.

Step 2: Make the Filling

  1. Heat olive oil in a pan over medium heat.
  2. Sauté garlic for 30 seconds until fragrant.
  3. Add thawed spinach and cook for 2–3 minutes to evaporate any excess moisture.
  4. Let it cool slightly, then mix with cream cheese, Parmesan, salt, pepper, and any optional spices.

Step 3: Assemble the Puffs

  1. Roll out the puff pastry on a lightly floured surface.
  2. Cut into 12 squares (about 2.5 to 3 inches each).
  3. Place a spoonful of spinach mixture in the center of each square.
  4. Fold corners over the filling to form a loose pinwheel or a triangle; press gently to seal.
  5. Beat the egg with a tablespoon of water and brush the tops of each puff.
  6. Sprinkle with optional seeds.

Step 4: Bake

  1. Bake for 15–18 minutes, or until golden and puffed.

Tips:

  • Be sure your spinach is very well drained to avoid soggy puffs.
  • You can add shredded mozzarella or feta for extra cheesy flavor.
  • These can be made ahead and frozen (unbaked or baked).

Serving Ideas:

Serve warm with:

  • Marinara dipping sauce
  • Garlic yogurt dip
  • Honey mustard
