DETOX KETO SOUTHWEST CHICKEN SOUP

Ingredients:
- 1 lb boneless, skinless chicken breast (or thighs)
- 4 cups chicken broth (preferably low sodium)
- 1 tablespoon olive oil (for sautéing)
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 medium zucchini, chopped
- 1 cup bell peppers, diced (mix of red, yellow, or green)
- 1/2 cup diced tomatoes (fresh or canned, no sugar added)
- 1 cup cauliflower rice (fresh or frozen)
- 1-2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric (for detox benefits)
- 1/4 teaspoon black pepper
- Salt to taste
- 1 lime (for zest and juice)
- 1/4 cup fresh cilantro, chopped
- Optional: 1-2 tablespoons of sour cream or avocado (for garnish)

Instructions:
- Cook the chicken:
- In a large pot, heat 1 tablespoon of olive oil over medium-high heat.
- Add the chicken breasts or thighs and season with a little salt and pepper. Cook until golden and fully cooked through (about 6-8 minutes per side).
- Once cooked, remove the chicken from the pot and set it aside to cool for a few minutes before shredding it with two forks. Set aside.
- Sauté the veggies:
- In the same pot, add the diced onion and sauté for about 2 minutes until softened.
- Add the minced garlic, bell peppers, zucchini, and cook for another 3-4 minutes, until the vegetables are tender.
- Add broth and spices:
- Pour in the chicken broth and add the diced tomatoes, cauliflower rice, chili powder, cumin, smoked paprika, turmeric, black pepper, and salt.
- Stir everything well and bring the soup to a simmer. Let it cook for 10-15 minutes so the flavors combine and the cauliflower rice softens.
- Add chicken and finish:
- Add the shredded chicken back into the pot. Stir well and allow the soup to simmer for another 5 minutes to heat through.
- Squeeze in the juice of one lime and stir to combine.
- Serve:
- Ladle the soup into bowls. Garnish with fresh cilantro, a squeeze of lime, and a dollop of sour cream or sliced avocado, if desired.
