Delightful Chicken and Potatoes

Ingredients:

For the  Potato Mixture:

  • 5 medium potatoes, peeled and grated
  • 3 large eggs
  • 1 small onion, finely chopped
  • 2 red bell peppers, diced
  • 2 tbsp parsley, chopped
  • 2 tbsp all-purpose flour (40 grams)
  • 1 tsp salt (8 grams)
  • ½ tsp black pepper

For the Chicken Filling:

  • 1 medium onion, finely diced
  • 2-3 tbsp vegetable oil (20 ml)
  • 200 grams boneless chicken, finely chopped
  • 2 red bell peppers, diced
  • 2 green bell peppers, diced
  • 2 garlic cloves, minced
  • 1 tsp salt (8 grams)
  • ½ tsp black pepper
  • ½ tsp cumin
  • 1 tsp red pepper flakes
  • 20 grams shredded cheddar cheese

For the Topping:

  • 100 grams shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

Step 1: Prepare the Potato Mixture

  1. Preheat the oven: Set your oven to 200°C (392°F).
  2. Grate and mix: Peel and grate the potatoes into a large bowl. Add the eggs, onion, red bell peppers, parsley, flour, salt, and pepper. Mix well until all ingredients are combined.

Step 2: Prepare the Chicken Filling

  1. Cook the onion: Heat the vegetable oil in a skillet over medium heat. Add the diced onion and cook until translucent.
  2. Cook the chicken: Add the chopped chicken and cook until browned and cooked through.
  3. Add vegetables and spices: Stir in the garlic, red and green bell peppers, salt, black pepper, cumin, and red pepper flakes. Cook until the vegetables are tender.
  4. Incorporate cheese: Add the shredded cheddar cheese and stir until melted. Remove from heat.

Step 3: Assemble the Dish

  1. Layer the potatoes: Grease a baking dish with oil. Spread half of the potato mixture evenly across the bottom.
  2. Add the filling: Spoon the chicken and vegetable filling over the potato layer, spreading it evenly.
  3. Top with potatoes: Cover the filling with the remaining potato mixture, spreading it out to seal the layers.

Step 4: Bake

  1. First bake: Place the dish in the oven and bake for 20-25 minutes.
  2. Add cheese topping: Remove the dish from the oven and sprinkle the remaining shredded cheddar cheese over the top.
  3. Second bake: Return the dish to the oven and bake for another 15 minutes, or until the cheese is melted and golden.

  1. Customize Veggies: Add mushrooms, zucchini, or spinach to enhance the nutrition and flavor.
  2. Cheese Varieties: Experiment with gouda, mozzarella, or a blend of cheeses for a unique twist.

  4. Crispier Potatoes: Bake the top layer slightly longer for extra crunch.
