For the Chicken Filling:

- 2-3 tbsp vegetable oil (20 ml)
- 200 grams boneless chicken, finely chopped
- 2 red bell peppers, diced

- ½ tsp black pepper
- ½ tsp cumin
- 1 tsp red pepper flakes
- 20 grams shredded cheddar cheese
For the Topping:
- 100 grams shredded cheddar cheese
- Fresh parsley, chopped (for garnish)
Instructions:
Step 1: Prepare the Potato Mixture
- Preheat the oven: Set your oven to 200°C (392°F).
- Grate and mix: Peel and grate the potatoes into a large bowl. Add the eggs, onion, red bell peppers, parsley, flour, salt, and pepper. Mix well until all ingredients are combined.
Step 2: Prepare the Chicken Filling
- Cook the onion: Heat the vegetable oil in a skillet over medium heat. Add the diced onion and cook until translucent.
- Cook the chicken: Add the chopped chicken and cook until browned and cooked through.
- Add vegetables and spices: Stir in the garlic, red and green bell peppers, salt, black pepper, cumin, and red pepper flakes. Cook until the vegetables are tender.
- Incorporate cheese: Add the shredded cheddar cheese and stir until melted. Remove from heat.
Step 3: Assemble the Dish
- Layer the potatoes: Grease a baking dish with oil. Spread half of the potato mixture evenly across the bottom.
- Add the filling: Spoon the chicken and vegetable filling over the potato layer, spreading it evenly.
- Top with potatoes: Cover the filling with the remaining potato mixture, spreading it out to seal the layers.
Step 4: Bake
- First bake: Place the dish in the oven and bake for 20-25 minutes.
- Add cheese topping: Remove the dish from the oven and sprinkle the remaining shredded cheddar cheese over the top.
- Second bake: Return the dish to the oven and bake for another 15 minutes, or until the cheese is melted and golden.
Tips for Success:
- Customize Veggies: Add mushrooms, zucchini, or spinach to enhance the nutrition and flavor.
- Cheese Varieties: Experiment with gouda, mozzarella, or a blend of cheeses for a unique twist.
- Control Spiciness: Adjust the red pepper flakes to suit your preferred heat level.
- Crispier Potatoes: Bake the top layer slightly longer for extra crunch.

- Refrigeration: Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezing: For longer storage, freeze portions in a freezer-safe container for up to 2 months.
- Reheating: Warm leftovers in the microwave or oven until heated through.
