Crispy Zucchini Recipe – Weight Watchers Points Included

Ingredients:

  • 2 medium zucchinis
  • 1/2 cup whole wheat breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • Cooking spray

Instructions:

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
  2. Prepare Zucchini: Wash and dry the zucchinis. Cut them into 1/4-inch thick slices.
  3. Prepare Breading: In a shallow dish, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper.
  4. Prepare Egg Mixture: In another shallow dish, beat the egg.
  5. Coat Zucchini: Dip each zucchini slice into the egg, letting any excess drip off, then coat with the breadcrumb mixture, pressing lightly to adhere.
  6. Arrange on Baking Sheet: Place the coated zucchini slices on the prepared baking sheet in a single layer. Lightly spray the tops with cooking spray.
  7. Bake: Bake for about 20 minutes, flipping halfway through, until the zucchini is golden and crispy.
  8. Serve: Serve hot with your favorite dipping sauce or enjoy on its own!
