Ingredients:

  • For the Broccoli Cheese Bites:
    • 2 cups broccoli florets (fresh or frozen, thawed and well-drained if frozen)
    • 1 cup shredded sharp cheddar cheese (or any cheese of your choice)
    • 1/4 cup grated Parmesan cheese
    • 1 large egg
    • 1/4 cup almond flour
    • 1/2 tsp garlic powder
    • 1/2 tsp onion powder
    • 1/2 tsp salt (or to taste)
    • 1/4 tsp black pepper
    • 2 tbsp olive oil (for frying, optional)

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
  2. Prepare the broccoli: If using fresh broccoli, steam or blanch the florets until they are tender (about 5-7 minutes). Then, finely chop or pulse in a food processor to create small pieces. If using frozen broccoli, make sure to thaw and squeeze out any excess moisture.
  3. Mix the ingredients: In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, grated Parmesan, egg, almond flour, garlic powder, onion powder, salt, and pepper. Stir until well combined. The mixture should hold together when pressed.
  4. Form the bites: Scoop a tablespoon of the broccoli mixture and roll it into a ball. Flatten it slightly to form a patty shape. Repeat with the remaining mixture.
  5. Bake (for crispy bites): Place the formed bites on the prepared baking sheet. Bake in the preheated oven for about 15-20 minutes, or until they are golden brown and crispy on the edges.
  6. Fry (for extra crispy texture): If you prefer a deep-fried texture, heat the olive oil in a large skillet over medium heat. Fry the broccoli cheese bites in batches, cooking for about 2-3 minutes on each side, until golden brown and crispy. Drain on paper towels to remove excess oil.
  7. Serve: Once done, remove from the oven or skillet and let them cool for a few minutes before serving. You can enjoy these bites with a side of ranch dressing or any keto-friendly dip.

Tips:

  • Add-ins: You can also add some cooked bacon bits, diced onion, or herbs (like parsley) for extra flavor.
  • Make them ahead: These bites can be made ahead of time and stored in the fridge for a few days. Reheat them in the oven to get them crispy again.
