Crescent Cheese Danishes

Ingredients:

For the Dough:

  • 1 ½ cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 cup almond flour
  • 1 tbsp coconut flour
  • 1 large egg
  • 1 tbsp baking powder
  • 1 tsp vanilla extract

For the Cheese Filling:

  • 4 oz cream cheese, softened
  • 2 tbsp powdered erythritol (or any keto-friendly sweetener)
  • ½ tsp vanilla extract
  • 1 tsp lemon zest (optional, for a fresh twist)

For the Glaze (Optional):

  • ¼ cup powdered erythritol
  • 1-2 tbsp heavy cream
  • ½ tsp vanilla extract

Instructions:

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Make the Dough:
    In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for 1 minute, stir, then microwave for another 30 seconds until melted and smooth.Add almond flour, coconut flour, baking powder, vanilla extract, and the egg. Mix until a dough forms. If it gets too sticky, you can knead it with oiled or wet hands.
  3. Shape the Danishes:
    Divide the dough into 6 equal portions. Roll each into a ball and flatten into a circle on the parchment paper, creating a small well in the center for the filling.
  4. Prepare the Filling:
    In a separate bowl, mix softened cream cheese, powdered erythritol, vanilla extract, and lemon zest until smooth. Spoon the mixture evenly into the center of each dough circle.
  5. Bake:
    Bake for 15-18 minutes, or until the edges are golden brown.
  6. Add the Glaze (Optional):
    While the danishes cool, mix powdered erythritol, heavy cream, and vanilla extract to make a glaze. Drizzle over the cooled danishes for that perfect finish!
