Crescent Cheese Danishes

Ingredients:
For the Dough:
- 1 ½ cups shredded mozzarella cheese
- 2 oz cream cheese
- 1 cup almond flour
- 1 tbsp coconut flour
- 1 large egg
- 1 tbsp baking powder
- 1 tsp vanilla extract
For the Cheese Filling:
- 4 oz cream cheese, softened
- 2 tbsp powdered erythritol (or any keto-friendly sweetener)
- ½ tsp vanilla extract
- 1 tsp lemon zest (optional, for a fresh twist)
For the Glaze (Optional):
- ¼ cup powdered erythritol
- 1-2 tbsp heavy cream
- ½ tsp vanilla extract
Instructions:
- Preheat Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. - Make the Dough:
In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for 1 minute, stir, then microwave for another 30 seconds until melted and smooth.Add almond flour, coconut flour, baking powder, vanilla extract, and the egg. Mix until a dough forms. If it gets too sticky, you can knead it with oiled or wet hands. - Shape the Danishes:
Divide the dough into 6 equal portions. Roll each into a ball and flatten into a circle on the parchment paper, creating a small well in the center for the filling. - Prepare the Filling:
In a separate bowl, mix softened cream cheese, powdered erythritol, vanilla extract, and lemon zest until smooth. Spoon the mixture evenly into the center of each dough circle. - Bake:
Bake for 15-18 minutes, or until the edges are golden brown. - Add the Glaze (Optional):
While the danishes cool, mix powdered erythritol, heavy cream, and vanilla extract to make a glaze. Drizzle over the cooled danishes for that perfect finish!
