Creamy Keto Buffalo Chicken

Ingredients:

  • 2 cups shredded cooked chicken (rotisserie or boiled)
  • 1/2 cup cream cheese, softened
  • 1/2 cup buffalo sauce (adjust to taste)
  • 1/4 cup ranch dressing or blue cheese dressing
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Chopped green onions or parsley for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Mix Ingredients: In a large mixing bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well incorporated.
  3. Add Cheese: Stir in half of the shredded cheddar cheese into the mixture.
  4. Transfer to Baking Dish: Pour the chicken mixture into a greased baking dish. Spread it evenly.
  5. Top with Cheese: Sprinkle the remaining cheddar cheese over the top of the chicken mixture.
  6. Bake: Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
  7. Garnish and Serve: Remove from the oven and garnish with chopped green onions or parsley. Serve warm with celery sticks or your favorite low-carb snacks.
