Crab Stuffed Cheddar Bay Biscuits with Lemon Butter

Ingredients
For the Biscuits:
- 1 ½ cups almond flour
- 1 tsp baking powder
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- 1 ½ cups shredded cheddar cheese
- 2 large eggs
- 3 tbsp unsalted butter, melted
For the Crab Stuffing:
- 8 oz lump crab meat (drained)
- 2 tbsp cream cheese, softened
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp lemon zest
- 1 tsp Old Bay seasoning
- 2 tbsp green onions, finely chopped
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
For the Lemon Butter:
- 3 tbsp unsalted butter, melted
- 1 tbsp lemon juice
- ½ tsp garlic powder
- 1 tsp fresh parsley, chopped
Instructions
Step 1: Prepare the Biscuit Dough
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, baking powder, garlic powder, onion powder, salt, and shredded cheddar cheese.
- In a separate bowl, whisk together the eggs and melted butter.
- Pour the egg mixture into the dry ingredients and stir until a thick dough forms.
Step 2: Prepare the Crab Filling
- In a medium bowl, mix together crab meat, cream cheese, mayonnaise, Dijon mustard, lemon zest, Old Bay seasoning, green onions, parsley, salt, and pepper.
- Stir until well combined.
Step 3: Assemble the Biscuits
- Scoop out a small amount of biscuit dough (about 2 tablespoons) and flatten it in your hand.
- Place a spoonful of the crab mixture in the center, then fold the dough around it, sealing the edges.
- Place each filled biscuit seam-side down on the prepared baking sheet. Repeat until all the dough and filling are used.
Step 4: Bake
- Bake the biscuits for 15-18 minutes, or until they are golden brown.
Step 5: Make the Lemon Butter
- While the biscuits bake, whisk together melted butter, lemon juice, garlic powder, and parsley.
Step 6: Brush and Serve
- When the biscuits come out of the oven, immediately brush them with the lemon butter mixture.
- Let cool for a few minutes before serving.
