Crab Stuffed Cheddar Bay Biscuits with Lemon Butter

Ingredients

For the Biscuits:

  • 1 ½ cups almond flour
  • 1 tsp baking powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • 1 ½ cups shredded cheddar cheese
  • 2 large eggs
  • 3 tbsp unsalted butter, melted

For the Crab Stuffing:

  • 8 oz lump crab meat (drained)
  • 2 tbsp cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp lemon zest
  • 1 tsp Old Bay seasoning
  • 2 tbsp green onions, finely chopped
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste

For the Lemon Butter:

  • 3 tbsp unsalted butter, melted
  • 1 tbsp lemon juice
  • ½ tsp garlic powder
  • 1 tsp fresh parsley, chopped

Instructions

Step 1: Prepare the Biscuit Dough

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, baking powder, garlic powder, onion powder, salt, and shredded cheddar cheese.
  3. In a separate bowl, whisk together the eggs and melted butter.
  4. Pour the egg mixture into the dry ingredients and stir until a thick dough forms.

Step 2: Prepare the Crab Filling

  1. In a medium bowl, mix together crab meat, cream cheese, mayonnaise, Dijon mustard, lemon zest, Old Bay seasoning, green onions, parsley, salt, and pepper.
  2. Stir until well combined.

Step 3: Assemble the Biscuits

  1. Scoop out a small amount of biscuit dough (about 2 tablespoons) and flatten it in your hand.
  2. Place a spoonful of the crab mixture in the center, then fold the dough around it, sealing the edges.
  3. Place each filled biscuit seam-side down on the prepared baking sheet. Repeat until all the dough and filling are used.

Step 4: Bake

  1. Bake the biscuits for 15-18 minutes, or until they are golden brown.

Step 5: Make the Lemon Butter

  1. While the biscuits bake, whisk together melted butter, lemon juice, garlic powder, and parsley.

Step 6: Brush and Serve

  1. When the biscuits come out of the oven, immediately brush them with the lemon butter mixture.
  2. Let cool for a few minutes before serving.
