Coconut chicken and garlic roasted potatoes

Ingredients:

  • 1 pound chicken tenders
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup shredded coconut (sweetened or unsweetened, based on preference)
  • 1/2 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • Cooking spray

Instructions:

  1. Prepare Breading Stations:
    • In one bowl, place the flour.
    • In a second bowl, beat the eggs.
    • In a third bowl, mix shredded coconut, panko breadcrumbs, salt, pepper, and paprika.
  2. Coat Chicken:
    • Dip each chicken tender in the flour, shaking off excess.
    • Dip into the beaten eggs.
    • Press into the coconut mixture, ensuring even coating.
  3. Preheat Air Fryer:
    • Preheat air fryer to 400°F (200°C) for about 5 minutes.
  4. Cook Chicken:
    • Lightly spray the air fryer basket with cooking spray.
    • Arrange chicken tenders in a single layer in the basket.
    • Lightly spray the tops of the chicken with cooking spray.
    • Air fry at 400°F (200°C) for 8-10 minutes, flipping halfway, until golden brown and cooked through.
  5. Serve:
    • Serve immediately with your favorite dipping sauce.

Garlic Roasted Potatoes

Ingredients:

  • 1.5 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat Air Fryer:
    • Preheat air fryer to 400°F (200°C) for about 5 minutes.
  2. Prepare Potatoes:
    • In a large bowl, toss the halved potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until evenly coated.
  3. Cook Potatoes:
    • Lightly spray the air fryer basket with cooking spray.
    • Place the potatoes in the basket in a single layer (you may need to cook in batches).
    • Air fry at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through, until the potatoes are crispy and golden brown.
  4. Serve:
    • Garnish with fresh parsley, if desired, and serve immediately.
