Coconut chicken and garlic roasted potatoes
Ingredients:
- 1 pound chicken tenders
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup shredded coconut (sweetened or unsweetened, based on preference)
- 1/2 cup panko breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- Cooking spray
Instructions:
- Prepare Breading Stations:
- In one bowl, place the flour.
- In a second bowl, beat the eggs.
- In a third bowl, mix shredded coconut, panko breadcrumbs, salt, pepper, and paprika.
- Coat Chicken:
- Dip each chicken tender in the flour, shaking off excess.
- Dip into the beaten eggs.
- Press into the coconut mixture, ensuring even coating.
- Preheat Air Fryer:
- Preheat air fryer to 400°F (200°C) for about 5 minutes.
- Cook Chicken:
- Lightly spray the air fryer basket with cooking spray.
- Arrange chicken tenders in a single layer in the basket.
- Lightly spray the tops of the chicken with cooking spray.
- Air fry at 400°F (200°C) for 8-10 minutes, flipping halfway, until golden brown and cooked through.
- Serve:
- Serve immediately with your favorite dipping sauce.
Garlic Roasted Potatoes
Ingredients:
- 1.5 pounds baby potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Preheat Air Fryer:
- Preheat air fryer to 400°F (200°C) for about 5 minutes.
- Prepare Potatoes:
- In a large bowl, toss the halved potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until evenly coated.
- Cook Potatoes:
