Churro Snacks
Ingredients:
- 1 cup almond flour
- 2 tbsp coconut flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 tbsp melted butter
- 1 large egg
- 1/4 cup granulated erythritol (for dough)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
For Coating:
- 1/4 cup granulated erythritol
- 1 tsp cinnamon
- 2 tbsp melted butter
Instructions:
- Preheat Oven: Set it to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a bowl, whisk together almond flour, coconut flour, baking powder, salt, erythritol, and cinnamon.
- Add Wet Ingredients: Pour in melted butter, egg, and vanilla extract. Mix until a dough forms.
- Shape Churro Bites: Roll small pieces of dough into mini logs or balls and place them on the baking sheet.
- Bake: Bake for 10-12 minutes until golden brown.
- Coat with Cinnamon Sugar: Mix erythritol and cinnamon in a bowl. Brush the warm churros with melted butter and roll them in the cinnamon mixture.
- Serve & Enjoy! Best served warm with a keto-friendly chocolate or caramel dip.
