Here’s a lighter version of the Chocolate Brownie Cake with Cookie Dough Layer:

Ingredients:

For the Brownie Cake:

  • 150g dark chocolate (70% cocoa or higher)
  • 2 tablespoons cocoa powder (unsweetened)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup granulated Stevia or another sugar substitute
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole wheat flour
  • A pinch of salt

For the Cookie Dough Layer:

  • 1/4 cup unsalted butter, softened
  • 2 tablespoons granulated Stevia or another sugar substitute
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour
  • A pinch of salt
  • 1/4 cup sugar-free chocolate chips

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease and line a round cake tin with parchment paper.
  2. In a microwave-safe bowl, melt the dark chocolate in 30-second intervals until it’s smooth and melted. Stir in the unsweetened applesauce.
  3. Add the granulated Stevia or your chosen sugar substitute to the chocolate mixture and stir until well combined.
  4. Beat in the eggs and vanilla extract.
  5. Gently fold in the whole wheat flour and cocoa powder. Add a pinch of salt and mix until you have a smooth batter.
  6. In a separate bowl, prepare the cookie dough layer. Cream together the softened butter, granulated Stevia, and vanilla extract until smooth. Gradually mix in the almond flour and a pinch of salt until just combined. Fold in the sugar-free chocolate chips.
  7. Pour half of the brownie cake batter into the prepared cake tin. Spread the cookie dough layer evenly over the batter. Then, pour the remaining brownie batter on top.
  8. Bake in the preheated oven for about 20-25 minutes or until the edges are set but the center is still slightly gooey. Keep a close eye on it as baking times may vary.
  9. Once baked, remove the cake from the oven and let it cool in the tin for a while before transferring it to a wire rack to cool completely.
  10. Once the Chocolate Brownie Cake with Cookie Dough Layer has cooled, you can dust it with powdered sugar or cocoa powder for a finishing touch (or use a sugar substitute for a lower-calorie option).
