Chickpeas Salad

Ingredients:

  • 1 large can of chickpeas, drained and rinsed
  • 1/4 cup of diced onion
  • 1/4 cup of diced red bell pepper
  • 2 tablespoons of kalamata olives, chopped

  • 1/2 teaspoon of cumin
  • 1/4 teaspoon of chili powder

  • 1/4 teaspoon of black pepper
  • 2 tablespoons of sesame seeds or hemp seeds

Instructions:

  • Place the chickpeas in a microwave-safe bowl and heat for 3 minutes.
  • In a small bowl, whisk together the basil, cumin, chili powder, turmeric, and black pepper.
  • Add the onion, red bell pepper, olives, and spice mixture to the chickpeas and toss well to combine.
  • Sprinkle the sesame seeds or hemp seeds on top and enjoy!
