Chickpeas Salad
Ingredients:
- 1 large can of chickpeas, drained and rinsed
- 1/4 cup of diced onion
- 1/4 cup of diced red bell pepper
- 2 tablespoons of kalamata olives, chopped
- 1 teaspoon of basil
- 1/2 teaspoon of cumin
- 1/4 teaspoon of chili powder
- 1/4 teaspoon of turmeric
- 1/4 teaspoon of black pepper
- 2 tablespoons of sesame seeds or hemp seeds
Instructions:
- Place the chickpeas in a microwave-safe bowl and heat for 3 minutes.
- In a small bowl, whisk together the basil, cumin, chili powder, turmeric, and black pepper.
- Add the onion, red bell pepper, olives, and spice mixture to the chickpeas and toss well to combine.
- Sprinkle the sesame seeds or hemp seeds on top and enjoy!
