Chicken spinach and mushroom low carb oven dish
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 2 cups mushrooms, sliced
- 2 cloves garlic, minced
- 4 cups fresh spinach
- 1/2 cup cream cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
- Sear the Chicken: In a large oven-proof skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes per side, until browned and cooked through. Remove the chicken from the skillet and set aside.
- Cook the Mushrooms and Garlic: In the same skillet, add sliced mushrooms and minced garlic. Cook for about 3-4 minutes, until the mushrooms are tender and the garlic is fragrant.
- Add Spinach: Add fresh spinach to the skillet and cook for another 2-3 minutes, stirring occasionally, until the spinach is wilted.
- Combine Creamy Mixture: Reduce the heat to low. Stir in cream cheese, mozzarella cheese, Parmesan cheese, and Italian seasoning until everything is well combined and creamy.
- Return Chicken to Skillet: Return the cooked chicken breasts to the skillet, nestling them into the spinach and mushroom mixture.
- Bake: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is heated through and the cheese is melted and bubbly.
