Chicken spinach and mushroom

Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 8 oz mushrooms, sliced
- 4 cups fresh spinach, washed and trimmed
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1 teaspoon dried Italian seasoning
- Red pepper flakes (optional, for some heat)
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Season Chicken: Season chicken breasts with salt and pepper on both sides.
- Sear Chicken: In an oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
- Cook Mushrooms and Garlic: In the same skillet, add sliced mushrooms and cook until they release their moisture and become golden brown. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- Wilt Spinach: Add fresh spinach to the skillet and cook until wilted.
- Arrange Chicken: Place the seared chicken breasts back into the skillet, nestled among the mushrooms and spinach.
- Add Broth and Seasoning: Pour chicken broth over the chicken and vegetables. Sprinkle dried Italian seasoning and red pepper flakes (if using) over the dish.
- Cheese Topping: Top each chicken breast with shredded mozzarella and grated Parmesan cheese.
- Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
- Broil (Optional): If you want a golden-brown crust on the cheese, you can broil the dish for an additional 1-2 minutes, watching closely to prevent burning.
- Serve: Remove from the oven, let it rest for a few minutes, then serve the chicken breasts with the mushroom, spinach, and cheese mixture on top.
