Chicken Parmesan
Ingredients:
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably Italian-style)
- 1 cup grated Parmesan cheese
- 1/2 cup vegetable oil (for frying)
- 1 cup marinara sauce (homemade or store-bought)
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, chopped (for garnish)

Instructions:
- Prep the Chicken:
- Place a chicken breast on a cutting board. Cover with plastic wrap and pound to an even thickness (about 1/2 inch thick) using a meat mallet or rolling pin. Repeat with the second breast.
- Season both sides of each chicken breast with salt and pepper.
- Coat the Chicken:
- Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.
- Dredge each chicken breast in the flour, shaking off any excess.
- Dip into the beaten eggs, letting any excess drip off.
- Press into the breadcrumb-Parmesan mixture, ensuring the chicken is evenly coated. Set aside on a plate.
- Fry the Chicken:
- In a large skillet, heat the vegetable oil over medium-high heat.
- Carefully place each breaded chicken breast into the hot oil. Cook until golden brown and crispy on each side, about 3-4 minutes per side.
- Transfer the cooked chicken to a paper towel-lined plate to drain excess oil.
- Assemble the Chicken Parmesan:
- Preheat your oven to 400°F (200°C).
- In a baking dish, spread a thin layer of marinara sauce on the bottom.
- Place the cooked chicken breasts on top of the sauce.
- Spoon more marinara sauce over each chicken breast, covering them generously.
- Sprinkle shredded mozzarella cheese over the top of each chicken breast.
- Bake:
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let it cool slightly.
- Garnish with chopped fresh basil leaves.
- Serve hot, optionally over cooked spaghetti or alongside garlic bread.
