Chicken Parmesan

Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably Italian-style)
  • 1 cup grated Parmesan cheese
  • 1/2 cup vegetable oil (for frying)
  • 1 cup marinara sauce (homemade or store-bought)
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves, chopped (for garnish)

Instructions:

  1. Prep the Chicken:
    • Place a chicken breast on a cutting board. Cover with plastic wrap and pound to an even thickness (about 1/2 inch thick) using a meat mallet or rolling pin. Repeat with the second breast.
    • Season both sides of each chicken breast with salt and pepper.
  2. Coat the Chicken:
    • Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.
    • Dredge each chicken breast in the flour, shaking off any excess.
    • Dip into the beaten eggs, letting any excess drip off.
    • Press into the breadcrumb-Parmesan mixture, ensuring the chicken is evenly coated. Set aside on a plate.
  3. Fry the Chicken:
    • In a large skillet, heat the vegetable oil over medium-high heat.
    • Carefully place each breaded chicken breast into the hot oil. Cook until golden brown and crispy on each side, about 3-4 minutes per side.
    • Transfer the cooked chicken to a paper towel-lined plate to drain excess oil.
  4. Assemble the Chicken Parmesan:
    • Preheat your oven to 400°F (200°C).
    • In a baking dish, spread a thin layer of marinara sauce on the bottom.
    • Place the cooked chicken breasts on top of the sauce.
    • Spoon more marinara sauce over each chicken breast, covering them generously.
    • Sprinkle shredded mozzarella cheese over the top of each chicken breast.
  5. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Remove from the oven and let it cool slightly.
    • Garnish with chopped fresh basil leaves.
    • Serve hot, optionally over cooked spaghetti or alongside garlic bread.
