Chicken Fajita Casserole
Ingredients:
- 1 lb (450g) boneless, skinless chicken breasts, cut into thin strips
- 1 tablespoon olive oil
- 1 packet of fajita seasoning mix (or use a homemade blend)
- 1 red bell pepper, sliced thinly
- 1 green bell pepper, sliced thinly
- 1 yellow or orange bell pepper, sliced thinly
- 1 medium onion, sliced
- 1 cup sour cream
- 1 cup shredded cheddar cheese (or a Mexican cheese blend)
- 1 cup shredded mozzarella cheese
- Salt and pepper, to taste
- Optional toppings: chopped cilantro, sliced green onions, salsa, or avocado
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Season and Cook the Chicken:
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken strips and season with half of the fajita seasoning mix. Cook until the chicken is just about cooked through (about 5–6 minutes).
- Remove the chicken from the skillet and set aside.
- Sauté the Vegetables:
- In the same skillet, add a little more oil if needed, and add the bell peppers and onion.
- Season with the remaining fajita seasoning mix and sauté until the vegetables are slightly tender but still crisp (about 5 minutes).
- Combine Ingredients:
- In a large mixing bowl, combine the cooked chicken, sautéed vegetables, and sour cream. Stir until everything is well coated.
- Season with additional salt and pepper if desired.
- Assemble the Casserole:
- Transfer the mixture to a greased baking dish (about 9×13 inches).
- Sprinkle shredded cheddar and mozzarella cheeses evenly over the top.
- Bake:
- Bake in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let cool slightly.
- Garnish with chopped cilantro, green onions, salsa, or avocado if desired. Serve warm!
