Chicken Fajita Casserole

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into thin strips
  • 1 tablespoon olive oil
  • 1 packet of fajita seasoning mix (or use a homemade blend)
  • 1 red bell pepper, sliced thinly
  • 1 green bell pepper, sliced thinly
  • 1 yellow or orange bell pepper, sliced thinly
  • 1 medium onion, sliced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (or a Mexican cheese blend)
  • 1 cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • Optional toppings: chopped cilantro, sliced green onions, salsa, or avocado

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Season and Cook the Chicken:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the chicken strips and season with half of the fajita seasoning mix. Cook until the chicken is just about cooked through (about 5–6 minutes).
    • Remove the chicken from the skillet and set aside.
  3. Sauté the Vegetables:
    • In the same skillet, add a little more oil if needed, and add the bell peppers and onion.
    • Season with the remaining fajita seasoning mix and sauté until the vegetables are slightly tender but still crisp (about 5 minutes).
  4. Combine Ingredients:
    • In a large mixing bowl, combine the cooked chicken, sautéed vegetables, and sour cream. Stir until everything is well coated.
    • Season with additional salt and pepper if desired.
  5. Assemble the Casserole:
    • Transfer the mixture to a greased baking dish (about 9×13 inches).
    • Sprinkle shredded cheddar and mozzarella cheeses evenly over the top.
  6. Bake:
    • Bake in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Remove from the oven and let cool slightly.
    • Garnish with chopped cilantro, green onions, salsa, or avocado if desired. Serve warm!
