Cherry Cheesecake Lush

Ingredients:

Crust:

  • 1 ½ cups almond flour
  • ¼ cup melted butter
  • 2 tbsp granulated keto sweetener

Cheesecake Layer:

  • 8 oz cream cheese, softened
  • ¼ cup powdered keto sweetener
  • 1 tsp vanilla extract
  • ½ cup heavy whipping cream

Whipped Cream Layer:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered keto sweetener
  • 1 tsp vanilla extract

Cherry Topping:

  • 1 cup fresh or frozen unsweetened cherries, chopped
  • 2 tbsp water
  • 1 tbsp keto sweetener
  • ½ tsp xanthan gum (to thicken)

Instructions:

  1. Make the crust: Mix almond flour, melted butter, and sweetener. Press into an 8×8-inch dish and chill.
  2. Prepare cheesecake layer: Beat cream cheese, sweetener, and vanilla until smooth. Fold in whipped heavy cream and spread over the crust.
  3. Make whipped cream: Whip heavy cream, sweetener, and vanilla until fluffy. Spread over the cheesecake layer.
  4. Prepare cherry topping: In a saucepan, heat cherries, water, and sweetener until soft. Sprinkle xanthan gum and stir until thickened. Let cool.
  5. Assemble: Spread cherry topping over the whipped layer and chill for 2-3 hours before serving.
