Cherry Cheesecake Lush
Ingredients:
Crust:
- 1 ½ cups almond flour
- ¼ cup melted butter
- 2 tbsp granulated keto sweetener
Cheesecake Layer:
- 8 oz cream cheese, softened
- ¼ cup powdered keto sweetener
- 1 tsp vanilla extract
- ½ cup heavy whipping cream
Whipped Cream Layer:
- 1 cup heavy whipping cream
- 2 tbsp powdered keto sweetener
- 1 tsp vanilla extract
Cherry Topping:
- 1 cup fresh or frozen unsweetened cherries, chopped
- 2 tbsp water
- 1 tbsp keto sweetener
- ½ tsp xanthan gum (to thicken)
Instructions:
- Make the crust: Mix almond flour, melted butter, and sweetener. Press into an 8×8-inch dish and chill.
- Prepare cheesecake layer: Beat cream cheese, sweetener, and vanilla until smooth. Fold in whipped heavy cream and spread over the crust.
- Make whipped cream: Whip heavy cream, sweetener, and vanilla until fluffy. Spread over the cheesecake layer.
- Prepare cherry topping: In a saucepan, heat cherries, water, and sweetener until soft. Sprinkle xanthan gum and stir until thickened. Let cool.
- Assemble: Spread cherry topping over the whipped layer and chill for 2-3 hours before serving.
