Caramelized Onion Tart
Ingredients
For the Crust:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup vegan butter (cold and cut into small pieces)
- 3-4 tablespoons ice water
For the Filling:
- 4 large onions, thinly sliced
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
- 1/2 cup vegan cream cheese
- 1/4 cup nutritional yeast
- 1 tablespoon Dijon mustard
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Crust:
- In a large bowl, mix the flour and salt.
- Add the cold vegan butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Add ice water one tablespoon at a time, mixing until the dough starts to come together.
- Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Caramelize the Onions:
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced onions and cook, stirring occasionally, for about 20-30 minutes until they are soft and golden brown.
- Add the balsamic vinegar, sugar, salt, pepper, and thyme. Cook for an additional 5 minutes until the onions are caramelized and fragrant.
- Remove from heat and set aside.
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Roll Out the Crust:
- On a lightly floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
- Prick the bottom of the crust with a fork to prevent bubbling.
- Prepare the Filling:
- In a bowl, mix the vegan cream cheese, nutritional yeast, and Dijon mustard until smooth.
- Spread this mixture evenly over the bottom of the crust.
- Assemble the Tart:
- Spread the caramelized onions over the cream cheese mixture in the crust.
- Bake for 25-30 minutes or until the crust is golden brown.
- Serve:
- Let the tart cool slightly before slicing.
- Garnish with fresh parsley if desired and serve warm or at room temperature.
