Cabbage and Potato Soup

Ingredients:
- 3tbs tomato paste
- 1 tsp Italian seasoning
- 1 tsp of dried oregano
- 1 tsp of dried parsley
- 2 tbs garlic paste (can use minced)
- 2 large potatoes – cubed
- 1 large carrot – diced
- 1 large red onion – finely diced
- 2 celery sticks – diced
- 6 cups water + 1 1/2 vegetable bouillon cubes
- 6 cups cabbage shredded
- 3 tbs olive oil
- 1 can kidney beans – drained
- 1 tbs salt
- 1 tbs pepper
Instructions:
- Turn stove on medium-high heat and place large pot on burner. Add olive oil.
- Add diced onion to pot and cook until translucent.
- Add celery and carrot to pot and cook until tender. About 5 minutes. Add garlic for 1 minute.
- Add Italian seasoning to veggies and mix. Add cabbage to pot and mix.
- Cook for 5 minutes. Stirring frequently so cabbage softens evenly.
- Add water. tomato paste, and potatoes to pot and mix. Bring to a boil. (Once boiling add bouillon cubes.)
- Add drained kidney beans, oregano, and parsley. Cook for 10 minutes
- Serve and enjoy!
