Buttered Rice with Peas

INGREDIENTS

1 1/2 cups basmati rice

2 1/2 cups water

1 cup frozen peas

1/2 cup water

4 tablespoons butter

INSTRUCTIONS

  1. Pour the rice into a mesh strainer and rinse under water for one to two minutes.
  2. Place the rinsed rice in the pot and add water.
  3. Bring rice and water to a boil.
  4. Cover pot and reduce heat to a simmer, cooking rice until the water is absorbed. (About 10-15 minutes.) Turn off the heat and let sit, still covered for five minutes.
  5. Cook the peas while the rice cooks. Boil some water in a small saucepan. Add the frozen peas and immediately turn off the heat. Allow the peas to sit for two minutes, then drain to remove any excess water.
  6. Add butter to the pot of rice, stirring to melt the butter and combine.
  7. Gently stir the peas into the rice, mixing throughout.
  8. Taste and season with salt and pepper as needed.
  9. Serve immediately.
