Breakfast Bowls with Sausage Gravy

It’s breakfast for dinner day! You know I love my breakfast for dinner meals as they are so simple to make and my family thinks it’s a big treat. Little do they know I really don’t like breakfast meals at breakfast time because I find them too heavy to eat but love them later in the day.

Verdict: I made this dish with frozen french fries. Why? Because that is what I had in my freezer. Remember if you don’t have an ingredient or don’t like a spice or item in a recipe get creative! As long as it isn’t a cake, cookie, etc… that depends on something to help it raise then go ahead and make it your own.

We love this because it was all the best parts of breakfast in one bowl. I wasn’t sure if I was going to like the sausage gravy but that is my son’s favorite so I put it in there. I am so glad I did!

I served this with a side of fruit salad to complete the meal.

Breakfast Bowls with Sausage Gravy

  • Servings: 5-6
  • Difficulty: easy

Ingredients:

  • 1 pound breakfast sausage
  • 1/2 cup flour
  • 3-5 cups milk
  • pinch of pepper flakes (optional)
  • pinch of cayenne pepper (optional)
  • pinch of garlic powder (optional)
  • salt and pepper, to taste
  • 1 dozen eggs
  • 1 cup sharp cheddar cheese, shredded
  • 1 (25 oz) bag tater tots, french fries, etc…

Directions:

  1. In a non-stick skillet with high sides over medium-high heat, add sausage to pot and break up sausage as it cooks until no longer pink.
  2. Sprinkle the flour over the sausage and drippings, stir constantly. Add in pepper flakes, cayenne pepper, and garlic powder if using. Cook flour over medium heat 2 or 3 minutes until thick paste.
  3. Stir in a about one cup of milk. Keep stirring, the gravy will start to thicken almost immediately.
  4. Keep adding in small amounts of milk and letting the gravy thicken. Repeat until you get the consistency you desire.
  5. Taste and season with salt, pepper, garlic, cayenne pepper, or pepper flakes as desired.
  6. While gravy is cooking bake potato choice in oven according to package directions. Bake until crispy on the outside and soft centers. Remove from oven when done.
  7. As gravy thickens scramble eggs on stove top is a second skillet to your liking. Once eggs are done remove from burner.
  8. Layer a bowl with potato, topped with egg, topped with cheese, topped with sausage gravy. Add salt and black pepper as desired.
  9. Serve hot.
