Ingredients
- 5.2 ounces Boursin cheese, softened to room temp
- 4 ounces cream cheese, softened to room temp
- 3 large (10-inch) flour tortillas or wraps
- 1/2 cup packed greens, arugula, spinach, or lettuce
- 1/2 cup diced roasted red peppers, could sub for raw red bell pepper
- 1/4 cup minced red onions
- 8 ounces deli sliced roast beef
Instructions
1. Combine the Boursin and cream cheese in a bowl and set it aside.
2. Lay a tortilla/wrap on a flat surface and spread a third of the cheese mixture onto it. Sprinkle with a third of the greens, roasted red peppers, and red onions, then top with a third of the sliced roast beef. Repeat with remaining ingredients.
3. Roll shut as tightly as possible and refrigerate in a large storage bag or a container with a lid for at least one hour.
4. Use a sharp knife to slice the ends off, then proceed to slice into approximately 10 pieces, about 1/2-inch wide. Serve.
Storage: Pinwheels will keep for up to three days if stored properly in the refrigerator. For best results, individually enclose the wraps tightly in plastic wrap prior to slicing. Once sliced, refrigerate in an airtight container or plastic/reusable storage bag.
