Blueberry Yogurt Protein Bites
Ingredients:
- 1 cup Greek yogurt (plain or vanilla)
- 1 cup rolled oats
- 1/2 cup protein powder (vanilla or unflavored)
- 1/2 cup fresh or frozen blueberries
- 2 tablespoons honey or maple syrup (for sweetness)
- 1/4 cup chia seeds (optional, for added texture and nutrition)
- 1/4 teaspoon vanilla extract (optional)
Instructions:
- Mix Ingredients: In a large bowl, combine the Greek yogurt, rolled oats, protein powder, honey or maple syrup, and vanilla extract if using. Stir until well combined.
- Add Blueberries: Gently fold in the blueberries. If you’re using frozen blueberries, you might want to thaw them first and pat them dry to avoid excess moisture.
- Shape the Bites: Use a small cookie scoop or your hands to form small balls (about 1 inch in diameter) from the mixture. Place them on a baking sheet lined with parchment paper.
- Chill: Refrigerate the bites for at least 30 minutes to firm up.
- Store: Once chilled, transfer the bites to an airtight container. They can be stored in the refrigerator for up to a week.
