Blueberry Yogurt Protein Bars

Ingredients:

  • 1 cup old-fashioned oats
  • 1 cup vanilla protein powder
  • 1/2 cup almond flour
  • 1/4 cup flaxseed meal
  • 1/4 teaspoon salt
  • 1/2 cup Greek yogurt (plain or vanilla)
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter (or any nut butter)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper, leaving some overhang on the sides for easy removal.
  2. Prepare Dry Ingredients:
    • In a large bowl, combine oats, protein powder, almond flour, flaxseed meal, and salt. Mix well.
  3. Mix Wet Ingredients:
    • In another bowl, whisk together Greek yogurt, honey or maple syrup, almond butter, egg, and vanilla extract until smooth.
  4. Combine Wet and Dry Ingredients:
    • Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Fold in Blueberries:
    • Gently fold in the blueberries, being careful not to crush them too much.
  6. Transfer to Baking Dish:
    • Transfer the mixture to the prepared baking dish and spread it evenly.
  7. Bake:
    • Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Cool and Cut:
    • Allow the bars to cool in the baking dish for about 10 minutes, then use the parchment paper overhang to lift them out. Place on a wire rack to cool completely before cutting into bars.
  9. Store:
    • Store the blueberry yogurt protein bars in an airtight container in the refrigerator for freshness.
