Blueberry Yogurt Protein Bars

Ingredients:
- 1 cup old-fashioned oats
- 1 cup vanilla protein powder
- 1/2 cup almond flour
- 1/4 cup flaxseed meal
- 1/4 teaspoon salt
- 1/2 cup Greek yogurt (plain or vanilla)
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter (or any nut butter)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper, leaving some overhang on the sides for easy removal.
- Prepare Dry Ingredients:
- In a large bowl, combine oats, protein powder, almond flour, flaxseed meal, and salt. Mix well.
- Mix Wet Ingredients:
- In another bowl, whisk together Greek yogurt, honey or maple syrup, almond butter, egg, and vanilla extract until smooth.
- Combine Wet and Dry Ingredients:
- Add the wet ingredients to the dry ingredients and mix until well combined.
- Fold in Blueberries:
- Gently fold in the blueberries, being careful not to crush them too much.
- Transfer to Baking Dish:
- Transfer the mixture to the prepared baking dish and spread it evenly.
- Bake:
- Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Cool and Cut:
- Allow the bars to cool in the baking dish for about 10 minutes, then use the parchment paper overhang to lift them out. Place on a wire rack to cool completely before cutting into bars.
- Store:
- Store the blueberry yogurt protein bars in an airtight container in the refrigerator for freshness.
