Yield: 4 servings (7 points per serving with blue, green and purple)
Ingredients
- 1 lb. Laura’s Lean Ground Beef
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup light mayonnaise
- 2 tablespoons dill relish
- 1 tablespoon ketchup
- 1 teaspoon mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 teaspoon white vinegar
- 4 cups lettuce, chopped
- 1/4 yellow onion, chopped
- 1/4 cup reduced fat cheddar cheese, shredded
- Pickle slices
Instructions
- To a mixing bowl add the mayonnaise, relish, ketchup, mustard, garlic powder, onion powder and white vinegar. Whisk together.
- Add the ground beef, garlic, salt and pepper to a pan. Cook the beef until brown. Remove any grease and remove from heat.
- Assemble the salad by adding 1 cup of lettuce, 1/4 of the ground beef, chopped onion, 1 tablespoon cheddar cheese, pickle slices and 2 tablespoons of the dressing. Repeat until all four salads are made.
