avocado ‘fries

Ingredients:

  • 2 ripe but firm avocados
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Cooking spray or a light brush of olive oil

Instructions:

  1. Preheat the air fryer: Preheat your air fryer to 400°F (200°C).
  2. Prepare the avocados:
    • Cut the avocados in half, remove the pit, and carefully peel off the skin.
    • Slice each half into 4-6 wedges, depending on the size of the avocado.
  3. Set up the breading station:
    • In one shallow bowl, combine the flour, salt, and pepper.
    • In a second shallow bowl, beat the eggs.
    • In a third shallow bowl, mix the panko breadcrumbs, garlic powder, and paprika.
  4. Bread the avocado slices:
    • Dredge each avocado slice in the flour mixture, shaking off any excess.
    • Dip the floured avocado slice into the beaten eggs, allowing any excess to drip off.
    • Coat the avocado slice with the panko breadcrumb mixture, pressing gently to ensure the breadcrumbs stick.
  5. Air fry the avocado slices:
    • Place the breaded avocado slices in a single layer in the air fryer basket. Make sure they are not touching to ensure even cooking.
    • Lightly spray the avocado slices with cooking spray or brush with a small amount of olive oil.
  6. Cook:
    • Air fry the avocado slices for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
  7. Serve:
    • Remove the avocado fries from the air fryer and serve immediately with your favorite dipping sauce, such as ranch, aioli, or a spicy sriracha mayo.
