avocado ‘fries
Ingredients:
- 2 ripe but firm avocados
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1 cup panko breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Cooking spray or a light brush of olive oil

Instructions:
- Preheat the air fryer: Preheat your air fryer to 400°F (200°C).
- Prepare the avocados:
- Cut the avocados in half, remove the pit, and carefully peel off the skin.
- Slice each half into 4-6 wedges, depending on the size of the avocado.
- Set up the breading station:
- In one shallow bowl, combine the flour, salt, and pepper.
- In a second shallow bowl, beat the eggs.
- In a third shallow bowl, mix the panko breadcrumbs, garlic powder, and paprika.
- Bread the avocado slices:
- Dredge each avocado slice in the flour mixture, shaking off any excess.
- Dip the floured avocado slice into the beaten eggs, allowing any excess to drip off.
- Coat the avocado slice with the panko breadcrumb mixture, pressing gently to ensure the breadcrumbs stick.
- Air fry the avocado slices:
- Place the breaded avocado slices in a single layer in the air fryer basket. Make sure they are not touching to ensure even cooking.
- Lightly spray the avocado slices with cooking spray or brush with a small amount of olive oil.
- Cook:
- Air fry the avocado slices for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
- Serve:
- Remove the avocado fries from the air fryer and serve immediately with your favorite dipping sauce, such as ranch, aioli, or a spicy sriracha mayo.
