Air Fryer stuffed chicken breasts

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup of your choice of stuffing (e.g., spinach and feta, sun-dried tomatoes and mozzarella, or cream cheese and herbs)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs or crushed crackers (optional, for a crispy coating)
  • Cooking spray (if needed)

Instructions:

  1. Preheat your air fryer to 375°F (190°C).
  2. Butterfly the chicken breasts: Lay the chicken breasts flat on a cutting board. Holding a sharp knife parallel to the cutting board, slice horizontally through the chicken breast, but don’t cut all the way through. Open it up like a book.
  3. Season the chicken: Season the inside of the chicken breasts with a pinch of salt and pepper.
  4. Add the stuffing: Place your chosen stuffing on one side of each chicken breast. Be careful not to overfill, as it may spill out during cooking.
  5. Fold the chicken: Carefully fold the other half of the chicken breast over the stuffing to enclose it. You can secure the edges with toothpicks if needed.
  6. Optional crispy coating: If you’d like a crispy coating, dip the stuffed chicken breasts in beaten egg, then coat them with breadcrumbs or crushed crackers. This step is optional but will add a nice crunch.
  7. Brush with olive oil: Brush both sides of the stuffed chicken breasts with olive oil. This helps achieve a crispy exterior.
  8. Air frying: Place the stuffed chicken breasts in the preheated air fryer basket. Make sure there’s some space between them so that the air can circulate properly. You might need to cook them in batches depending on the size of your air fryer.
  9. Air fry: Cook the chicken for about 20-25 minutes at 375°F (190°C), flipping them halfway through. Cooking times may vary depending on the size and thickness of the chicken breasts, so use a meat thermometer to ensure they reach an internal temperature of 165°F (74°C).
  10. Serve: Once the stuffed chicken breasts are cooked to perfection, remove them from the air fryer, let them rest for a few minutes, then slice and serve…
