Ingredients:

  • 1 pound baby potatoes (red or yellow)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions:

  1. Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Cook Potatoes:
    • Place the baby potatoes in a pot and cover with water. Add a pinch of salt.
    • Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
    • Drain the potatoes and let them cool slightly.
  3. Smash Potatoes:
    • On a cutting board or baking sheet, gently smash each potato with the bottom of a glass or a potato masher until they are about 1/2 inch thick.
  4. Season Potatoes:
    • In a large bowl, mix the olive oil, garlic powder, onion powder, rosemary (if using), salt, and pepper.
    • Gently toss the smashed potatoes in the seasoned olive oil mixture, ensuring they are well-coated.
  5. Air Fry Potatoes:
    • Place the seasoned smashed potatoes in a single layer in the air fryer basket. Do not overcrowd; you may need to cook in batches depending on the size of your air fryer.
    • Air fry at 400°F (200°C) for 10-15 minutes, flipping halfway through, until the potatoes are crispy and golden brown.
  6. Garnish and Serve:
    • Transfer the crispy smashed potatoes to a serving dish.
    • Sprinkle with fresh parsley and grated Parmesan cheese if desired.
    • Serve immediately and enjoy!
