AIR FRYER SCOTCH EGGS
Air Fryer Scotch Eggs are an easy meal, with a crispy crust, making them a perfect snack or quick breakfast.
INGREDIENTS
6 large hard boiled eggs
1 pound ground pork sausage
2 large eggs whisked
1 cup breadcrumbs
INSTRUCTIONS
To make this perfect snack or brunch menu item, you need to start with a soft or hard-boiled egg. You can follow this Air Fryer Hard Boiled Egg recipe, and have them ready in no time. Then peel, and set aside.
Divide the raw sausage meat into six evenly sized patties. Shape each portion of sausage flat, and then place an egg in center and wrap sausage around the egg, entirely covering the egg. Repeat until all six eggs are covered.
Whisk two eggs into a small shallow dish, and place bread crumbs in another small bowl. Then, dip wrapped eggs into whisked egg mixture. Then dip into the bread or panko crumbs until completely coated.
Place eggs in air fryer basket, after lightly spraying with nonstick oil spray, or lined with air fryer parchment paper.
Air Fry in a single layer, without crowding, at 400 degrees F for 15-18 minutes, until sausage layer is completely cooked and crispy coating is golden brown.
NOTES
For a low carb coating, you can substitute pork rinds or parmesan cheese for the breadcrumbs.
