Air Fryer Scotch Eggs

Ingredients:

6 large eggs 1 pound of ground pork sausage (you can use your favorite sausage) 1/2 cup breadcrumbs 1 teaspoon salt 1/2 teaspoon black pepper 1/2 teaspoon dried sage (optional) 1/2 teaspoon paprika (optional) 1/4 cup all-purpose flour 1-2 large eggs, beaten (for dipping) Breadcrumbs for coating

Instructions:

  1. Start by boiling the eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil, then reduce the heat and simmer for about 9-10 minutes for a hard-boiled egg. Once done, transfer the eggs to a bowl of ice water to cool completely. This will make them easier to handle.
  2. While the eggs are cooling, prepare the sausage mixture. In a bowl, combine the ground pork sausage, 1/2 cup breadcrumbs, salt, pepper, and any optional seasonings you prefer (such as sage and paprika). Mix the ingredients until well combined.
  3. Once the eggs are cool, peel them carefully.
  4. Divide the sausage mixture into 6 equal portions. Flatten each portion into a thin patty in the palm of your hand.
  5. Place a peeled egg in the center of each sausage patty and encase it completely with the sausage mixture, ensuring there are no gaps.
  6. Roll each sausage-coated egg in flour to help the egg wash adhere better.
  7. Dip each flour-coated egg into beaten eggs and then roll it in breadcrumbs to create a nice, even coating.
  8. Preheat your air fryer to 375°F (190°C).
  9. Place the coated eggs in the preheated air fryer basket, making sure they are not overcrowded. You may need to cook them in batches.
  10. Air fry the Scotch eggs for about 15-20 minutes, turning them occasionally to ensure even browning. They should become golden and crispy on the outside.
  11. Remove the Scotch eggs from the air fryer and let them cool slightly before serving. You can serve them whole or cut in half to reveal the delicious, perfectly cooked eggs in the center.
