Air fryer Roasted Zucchini
Ingredients:
- 2-3 medium zucchinis
- 1-2 tablespoons of olive oil
- Salt and pepper to taste
- Optional seasonings (e.g., garlic powder, paprika, Parmesan cheese, or your favorite herbs and spices)
Instructions:
- Preheat your air fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes. This step may vary depending on your specific air fryer model.
- Prepare the zucchini: Wash the zucchinis thoroughly and cut off the ends. You can slice the zucchini into rounds or long spears, depending on your preference. The thickness should be around 1/2 inch (1.3 cm) for even cooking.
- Season the zucchini: Place the zucchini slices in a bowl and drizzle with olive oil. Season with salt, pepper, and any additional seasonings you prefer. Toss to coat the zucchini evenly with the oil and seasonings.
- Air fry the zucchini: Arrange the seasoned zucchini in a single layer in the air fryer basket. You may need to do this in batches if your air fryer is small. Be sure not to overcrowd the basket to allow for even cooking.
- Cook the zucchini: Set the air fryer to 375°F (190°C) and cook the zucchini for 10-12 minutes. You may want to check the zucchini at the 8-minute mark and shake the basket to ensure even cooking. Cook until the zucchini is tender and has a nice golden-brown color.
