Air fryer Roasted Beets

Ingredients:

  • 2-3 medium-sized beets
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional: fresh herbs or spices of your choice (rosemary, thyme, garlic powder, etc.)

Instructions:

  1. Prepare the Beets:
    • Wash the beets thoroughly to remove any dirt.
    • Trim the tops and tails of the beets.
    • If the beet skins are thick, you can peel them, but it’s not necessary. The skin is edible and contains many nutrients. Peeling is a matter of personal preference.
  2. Cut the Beets:
    • Cut the beets into uniform-sized pieces. You can slice them into rounds, cut them into wedges, or even leave them whole if they’re small enough.
  3. Season the Beets:
    • Place the beet pieces in a bowl and drizzle them with olive oil. Toss the beets to coat them evenly.
    • Season the beets with salt, pepper, and any other herbs or spices you like. Toss again to distribute the seasoning.
  4. Preheat the Air Fryer:
    • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  5. Air Fry the Beets:
    • Place the seasoned beet pieces in the air fryer basket in a single layer. Do not overcrowd the basket; you may need to cook them in batches if you have a lot of beets.
    • Cook the beets at 375°F (190°C) for about 15-20 minutes, shaking the basket or tossing the beets halfway through the cooking time.
    • The exact cooking time may vary depending on the size of your beet pieces and the air fryer model. Beets are done when they are tender on the inside and have a crispy, caramelized exterior.
  6. Serve:
    • Once the beets are done, transfer them to a serving dish and season with more salt and pepper if needed.
    • You can garnish with fresh herbs or a drizzle of balsamic vinegar if desired….
