Air Fryer Melting Potatoes
Ingredients:
- 1.5 pounds of small Yukon Gold or red potatoes (or any waxy variety)
- 2-3 cloves of garlic, minced
- 2-3 tablespoons of olive oil
- 1 teaspoon of dried thyme
- 1/2 teaspoon of dried rosemary (or fresh rosemary, finely chopped)
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions:
- Start by preheating your air fryer to 400°F (200°C).
- Wash and scrub the potatoes thoroughly. You can peel them if you prefer, but leaving the skin on adds extra texture and flavor.
- Cut the potatoes into 1/2-inch thick slices. You want them to be relatively uniform in size so that they cook evenly.
- In a large mixing bowl, combine the sliced potatoes, minced garlic, olive oil, dried thyme, dried rosemary (or fresh if using), salt, and pepper. Toss everything together to ensure the potatoes are evenly coated with the seasonings and oil.
- Place the seasoned potato slices in the air fryer basket in a single layer. Don’t overcrowd the basket; you may need to cook them in batches depending on the size of your air fryer.
- Air fry the potatoes at 400°F (200°C) for about 15-20 minutes, shaking the basket or turning the potatoes halfway through. Cooking times may vary depending on the size and thickness of your potato slices, so keep an eye on them. They should be golden brown and crispy on the outside and tender on the inside.
- Once the potatoes are done, remove them from the air fryer, and garnish with fresh chopped parsley for a burst of color and flavor.
