Air Fryer Hasselback Potatoes

Ingredients:

  • 4 medium-sized russet potatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons melted butter
  • 1 teaspoon dried thyme or rosemary (or a combination of both)
  • Salt and pepper, to taste
  • Grated parmesan cheese (optional, for topping)
  • Chopped fresh parsley (optional, for garnish)

Instructions:

  1. Wash the potatoes thoroughly and pat them dry. Leave the skin on for added texture and flavor.
  2. Place a potato between two chopsticks or wooden spoons. This will act as a guide to prevent you from cutting all the way through the potato. Make thin, evenly spaced slices (about 1/8 inch apart) across the potato, using a sharp knife.
  3. Repeat this process for all the potatoes.
  4. In a small bowl, mix the olive oil, minced garlic, dried herbs, salt, and pepper.
  5. Preheat your air fryer to 375°F (190°C).
  6. Brush the prepared potatoes with the garlic and herb-infused olive oil mixture, making sure to get the mixture into the slices as much as possible.
  7. Place the potatoes in the air fryer basket. You may need to do this in batches, depending on the size of your air fryer.
  8. Cook the potatoes in the air fryer for 25-30 minutes, or until they are crispy on the outside and tender on the inside. Cooking times may vary depending on your air fryer, so check for doneness by poking a fork into the potatoes.
  9. If desired, during the last 5 minutes of cooking, brush the potatoes with melted butter to enhance their flavor and crispiness.
  10. Once they are cooked to your satisfaction, remove the Hasselback potatoes from the air fryer and, if desired, sprinkle them with grated parmesan cheese and chopped fresh parsley.
  11. Serve the Air Fryer Hasselback Potatoes hot as a side dish or as an accompaniment to your favorite main course. Enjoy!…
