Air Fryer Hasselback Potatoes
Ingredients:
- 4 medium-sized russet potatoes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons melted butter
- 1 teaspoon dried thyme or rosemary (or a combination of both)
- Salt and pepper, to taste
- Grated parmesan cheese (optional, for topping)
- Chopped fresh parsley (optional, for garnish)
Instructions:
- Wash the potatoes thoroughly and pat them dry. Leave the skin on for added texture and flavor.
- Place a potato between two chopsticks or wooden spoons. This will act as a guide to prevent you from cutting all the way through the potato. Make thin, evenly spaced slices (about 1/8 inch apart) across the potato, using a sharp knife.
- Repeat this process for all the potatoes.
- In a small bowl, mix the olive oil, minced garlic, dried herbs, salt, and pepper.
- Preheat your air fryer to 375°F (190°C).
- Brush the prepared potatoes with the garlic and herb-infused olive oil mixture, making sure to get the mixture into the slices as much as possible.
- Place the potatoes in the air fryer basket. You may need to do this in batches, depending on the size of your air fryer.
- Cook the potatoes in the air fryer for 25-30 minutes, or until they are crispy on the outside and tender on the inside. Cooking times may vary depending on your air fryer, so check for doneness by poking a fork into the potatoes.
- If desired, during the last 5 minutes of cooking, brush the potatoes with melted butter to enhance their flavor and crispiness.
- Once they are cooked to your satisfaction, remove the Hasselback potatoes from the air fryer and, if desired, sprinkle them with grated parmesan cheese and chopped fresh parsley.
