Air fryer Chocolate Cheesecake

Ingredients:
For the Crust:
- 1 cup chocolate graham cracker crumbs (about 8-10 crackers)
- 2 tablespoons granulated sugar
- 1/4 cup unsalted butter, melted
For the Cheesecake Filling:
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips, melted and slightly cooled
For the Topping:
- 1/2 cup heavy cream
- 1/2 cup semi-sweet chocolate chips
Instructions:
- Prepare the Crust:
- In a medium bowl, combine the chocolate graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Press the mixture into the bottom of a 7-inch springform pan. Make sure it’s evenly spread and firmly packed. Place the crust in the freezer while preparing the filling.
- Prepare the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the granulated sugar and beat until well combined.
- Add the eggs one at a time, beating well after each addition.
- Add the sour cream and vanilla extract, and mix until smooth.
- Add the melted chocolate and mix until the filling is thoroughly combined and smooth.
- Assemble and Cook:
- Pour the cheesecake filling over the prepared crust in the springform pan.
- Cover the bottom and sides of the pan with aluminum foil to prevent any leaks.
- Preheat your air fryer to 300°F (150°C).
- Place the cheesecake in the air fryer basket. Cook for 25-30 minutes, or until the center is set and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Once done, remove the cheesecake from the air fryer and allow it to cool to room temperature, then refrigerate for at least 4 hours or overnight for best results.
- Prepare the Topping:
- Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Do not boil.
- Remove from heat and add the chocolate chips. Let sit for a minute or two, then stir until smooth and glossy.
- Pour the ganache over the chilled cheesecake and spread evenly.
- Serve:
- Once the ganache has set, remove the cheesecake from the springform pan.
- Slice and enjoy your rich and creamy air fryer chocolate cheesecake!
Tips:
- Make sure all ingredients are at room temperature before mixing for a smoother cheesecake batter.
- If the top of the cheesecake starts to brown too quickly, cover it loosely with aluminum foil during the cooking process.
