Air fryer Chocolate Cheesecake

Ingredients:

For the Crust:

  • 1 cup chocolate graham cracker crumbs (about 8-10 crackers)
  • 2 tablespoons granulated sugar
  • 1/4 cup unsalted butter, melted

For the Cheesecake Filling:

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips, melted and slightly cooled

For the Topping:

  • 1/2 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips

Instructions:

  1. Prepare the Crust:
    1. In a medium bowl, combine the chocolate graham cracker crumbs, sugar, and melted butter. Mix until well combined.
    2. Press the mixture into the bottom of a 7-inch springform pan. Make sure it’s evenly spread and firmly packed. Place the crust in the freezer while preparing the filling.
  2. Prepare the Cheesecake Filling:
    1. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    2. Add the granulated sugar and beat until well combined.
    3. Add the eggs one at a time, beating well after each addition.
    4. Add the sour cream and vanilla extract, and mix until smooth.
    5. Add the melted chocolate and mix until the filling is thoroughly combined and smooth.
  3. Assemble and Cook:
    1. Pour the cheesecake filling over the prepared crust in the springform pan.
    2. Cover the bottom and sides of the pan with aluminum foil to prevent any leaks.
    3. Preheat your air fryer to 300°F (150°C).
    4. Place the cheesecake in the air fryer basket. Cook for 25-30 minutes, or until the center is set and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
    5. Once done, remove the cheesecake from the air fryer and allow it to cool to room temperature, then refrigerate for at least 4 hours or overnight for best results.
  4. Prepare the Topping:
    1. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Do not boil.
    2. Remove from heat and add the chocolate chips. Let sit for a minute or two, then stir until smooth and glossy.
    3. Pour the ganache over the chilled cheesecake and spread evenly.
  5. Serve:
    1. Once the ganache has set, remove the cheesecake from the springform pan.
    2. Slice and enjoy your rich and creamy air fryer chocolate cheesecake!

Tips:

  • Make sure all ingredients are at room temperature before mixing for a smoother cheesecake batter.
  • If the top of the cheesecake starts to brown too quickly, cover it loosely with aluminum foil during the cooking process.
  • Allowing the cheesecake to chill thoroughly in the fridge will enhance its flavor and texture.
