Air fryer chicken fajitas

Ingredients:
For the Chicken:
- 1 pound boneless, skinless chicken breasts or thighs, thinly sliced
- 2 tablespoons fajita seasoning mix (store-bought or homemade)
- 2 tablespoons olive oil
For the Fajita Vegetables:
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon fajita seasoning mix
- Salt and pepper to taste
For Serving:
- Flour or corn tortillas
- Salsa, guacamole, sour cream, shredded cheese, and other toppings of your choice
Instructions:
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- In a large mixing bowl, combine the sliced chicken, 2 tablespoons of fajita seasoning mix, and 2 tablespoons of olive oil. Toss the chicken to coat it evenly with the seasoning.
- In another bowl, combine the sliced bell peppers, sliced onion, 1 tablespoon of olive oil, and 1 teaspoon of fajita seasoning mix. Toss to coat the vegetables evenly. Season with salt and pepper to taste.
- Place the chicken and vegetables in the air fryer basket, ensuring they are in a single layer and not overcrowded. You may need to cook them in batches if your air fryer is small.
- Cook the chicken and vegetables in the air fryer at 400°F (200°C) for 10-12 minutes, shaking the basket or tossing the contents halfway through to ensure even cooking. The chicken should reach an internal temperature of 165°F (74°C).
- While the chicken and vegetables are cooking, warm your tortillas in the microwave or on a skillet.
- Once the chicken and vegetables are done, serve them on warm tortillas. Top with your favorite fajita toppings, such as salsa, guacamole, sour cream, and shredded cheese.
