Air fryer chicken fajitas

Ingredients:

For the Chicken:

  • 1 pound boneless, skinless chicken breasts or thighs, thinly sliced
  • 2 tablespoons fajita seasoning mix (store-bought or homemade)
  • 2 tablespoons olive oil

For the Fajita Vegetables:

  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon fajita seasoning mix
  • Salt and pepper to taste

For Serving:

  • Flour or corn tortillas
  • Salsa, guacamole, sour cream, shredded cheese, and other toppings of your choice

Instructions:

  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. In a large mixing bowl, combine the sliced chicken, 2 tablespoons of fajita seasoning mix, and 2 tablespoons of olive oil. Toss the chicken to coat it evenly with the seasoning.
  3. In another bowl, combine the sliced bell peppers, sliced onion, 1 tablespoon of olive oil, and 1 teaspoon of fajita seasoning mix. Toss to coat the vegetables evenly. Season with salt and pepper to taste.
  4. Place the chicken and vegetables in the air fryer basket, ensuring they are in a single layer and not overcrowded. You may need to cook them in batches if your air fryer is small.
  5. Cook the chicken and vegetables in the air fryer at 400°F (200°C) for 10-12 minutes, shaking the basket or tossing the contents halfway through to ensure even cooking. The chicken should reach an internal temperature of 165°F (74°C).
  6. While the chicken and vegetables are cooking, warm your tortillas in the microwave or on a skillet.
  7. Once the chicken and vegetables are done, serve them on warm tortillas. Top with your favorite fajita toppings, such as salsa, guacamole, sour cream, and shredded cheese.
  8. Roll up the tortillas and enjoy your air fryer chicken fajitas!
