Air Fryer Cheesy Focaccia

Total Time: 45 minutes
Serves: 4-6

Ingredients:

  • Almond Flour: 110g (1 cup)
  • Unsweetened Almond Milk: 60ml (1/4 cup)
  • Coconut Oil: 30ml (2 tbsp)
  • A Pinch of Salt
  • Cauliflower Rice: 200g (2 cups)
  • Shredded Cheese: 120g (1 cup)

Instructions:

  1. In a large mixing bowl, combine the almond flour with a pinch of salt.
  2. Pour in coconut oil and unsweetened almond milk.
  3. Knead until a smooth dough forms, then cover it and set it aside for 15-20 minutes.
  4. Microwave the cauliflower rice for about 5 minutes, then squeeze out the excess moisture using a cheesecloth or a paper towel.
  5. Roll out the dough into a disk.
  6. Place two-thirds of the cheese on top.
  7. Add the cauliflower rice and more cheese.
  8. Pinch the edges of the dough together to close the filling.
  9. Flatten the flatbread with a rolling pin.
  10. Preheat the air fryer to 375°F (190°C).
  11. Place the flatbread in the air fryer basket.
  12. Air fry for 12-15 minutes, flipping halfway through, until golden brown and cooked through.
  13. Slice and serve.
