Air Fryer Cheesy Focaccia

Ingredients:
- Almond Flour: 110g (1 cup)
- Unsweetened Almond Milk: 60ml (1/4 cup)
- Coconut Oil: 30ml (2 tbsp)
- A Pinch of Salt
- Cauliflower Rice: 200g (2 cups)
- Shredded Cheese: 120g (1 cup)
Instructions:
- In a large mixing bowl, combine the almond flour with a pinch of salt.
- Pour in coconut oil and unsweetened almond milk.
- Knead until a smooth dough forms, then cover it and set it aside for 15-20 minutes.
- Microwave the cauliflower rice for about 5 minutes, then squeeze out the excess moisture using a cheesecloth or a paper towel.
- Roll out the dough into a disk.
- Place two-thirds of the cheese on top.
- Add the cauliflower rice and more cheese.
- Pinch the edges of the dough together to close the filling.
- Flatten the flatbread with a rolling pin.
- Preheat the air fryer to 375°F (190°C).
- Place the flatbread in the air fryer basket.
- Air fry for 12-15 minutes, flipping halfway through, until golden brown and cooked through.
- Slice and serve.
