Air Fryer Bread Pudding

Ingredients:

  • 4 cups of bread, cubed (use day-old bread, brioche, or challah)
  • 2 cups of milk
  • 1/2 cup of heavy cream
  • 3/4 cup of granulated sugar
  • 3 large eggs
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of salt
  • 1/2 cup of raisins (optional)
  • 2 tablespoons of melted butter

Instructions:

  1. Prepare the Bread: If your bread is fresh, cube it and let it sit out for a few hours to dry out. You can also lightly toast the cubes in the oven for 10 minutes at 300°F (150°C).
  2. Make the Custard: In a large bowl, whisk together the milk, heavy cream, sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  3. Combine Bread and Custard: Add the bread cubes and raisins (if using) to the bowl with the custard mixture. Stir gently to ensure all the bread is soaked with the custard. Let it sit for about 10-15 minutes to absorb the liquid.
  4. Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C) for about 5 minutes.
  5. Prepare the Baking Dish: Lightly grease a baking dish that fits into your air fryer basket with melted butter. Pour the bread pudding mixture into the prepared dish, spreading it out evenly.
  6. Air Fry the Bread Pudding: Place the baking dish in the air fryer basket. Cook at 350°F (175°C) for 20-25 minutes, or until the top is golden brown and the custard is set. You can check doneness by inserting a knife into the center; it should come out clean.
  7. Cool and Serve: Remove the bread pudding from the air fryer and let it cool slightly before serving. You can serve it warm or at room temperature. Optionally, dust with powdered sugar or drizzle with caramel sauce.
