Air Fryer Bread and Butter Pudding
Ingredients:
9 slices of bread, thickly buttered (crust on or off)
3 tablespoons sultanas
5 eggs
1 teaspoon vanilla essence
Sugar or powdered sweetener to taste
Instructions:
Grease a Dish:
Grease a suitable baking dish that fits in your air fryer.
Layer the Bread and Sultanas:
Place the buttered bread slices butter side up in the dish, cutting to fit if necessary (you can remove the crusts if you prefer).
Sprinkle 1/3 of the sultanas over the bread.
Sprinkle sugar or sweetener over the sultanas.
Repeat this process twice more, or until you fill the dish if using a deeper/bigger dish.
Prepare the Custard:
In a bowl, beat the eggs with the milk and vanilla essence until well combined.
Pour the custard mixture over the bread, making sure it soaks through.
Soak and Squish:
Leave the mixture to soak for at least an hour.
Gently press down with a fork to ensure the bread absorbs the custard mixture.
Sprinkle a bit more sugar or sweetener on top.
Air Fry the Pudding:
Preheat the air fryer to 160°C (320°F).
Air fry the pudding for around 20 minutes, until it is set and golden on top.
Optional Extra Treat:
For an extra treat, you can add a layer of sliced apples in between one of the layers of bread and sultanas.
This pudding will have a lovely souffle-like texture and might sink a bit as it cools, but it will taste absolutely delicious. Enjoy your comforting Bread and Butter Pudding!
