Air Fryer Bacon and Egg Cups

Ingredients

  • ▢3 slices bacon sliced in half (you’ll use half a slice for each egg cup)
  • ▢6 large eggs
  • ▢3-6 tablespoons diced bell pepper optional, see notes for other topping ideas
  • ▢diced scallion
  • ▢salt and pepper optional

Instructions 

  • Slice the bacon strips in half. Line each wrapper with a half slice of bacon.
  • Place the silicone cups into the air fryer. Carefully crack an egg inside each cup, using the bacon as support for the runny egg.
  • Sprinkle with diced peppers, salt and pepper, if desired.
  • Gently close the air fryer basket, careful not to topple over any of the cups. Cook at 330°F for 10 minutes. The time will vary depending on how you like your eggs. If you like your eggs over-medium, start with 8 minutes. At 10 minutes, egg yolks will be over-well.
  • When they are cooked to your liking, remove the baked egg cups carefully. They will be very hot. Sprinkle with green onion or any toppings you like.

Notes

  • Be sure to place the bacon-lined wrappers in the air fryer before cracking in the egg. It’s pretty tricky to move the silicone cup once there’s a cracked egg in it.
  • If you prefer crispier bacon, pre-cook the bacon to medium-rare (so it’s warmed through but still floppy) before lining it around the wrappers. You can also use crumbled bacon if you want it to be extra crispy.
  • In place of bacon, strips of ham, turkey bacon, or Canadian bacon are also a great option.
  • In place of bell pepper, try finely diced asparagus, chopped zucchini, chopped mushrooms, or diced onion.
  • Add shredded cheese! Add your favorite flavors of cheese to the bottom of each cup before cracking the egg, or sprinkle some on top before air frying.
  • Storing: Allow them to cool, then refrigerate them in an airtight container. They can last for 2-3 days in the refrigerator.
  • Freezing: Place them in a single layer on a baking sheet to freeze individually, then transfer to freezer bags or airtight container. They can be frozen for up to 1-2 months.
