Lemon Garlic Butter Shrimp with Asparagus

Ingredients

  • 500g (1 lb) large shrimp, peeled & deveined
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 bunch asparagus, trimmed & cut into 2-inch pieces
  • Juice & zest of 1 lemon
  • 1/2 tsp red pepper flakes (optional)
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep shrimp:
    • Pat shrimp dry with paper towels and season lightly with salt and pepper.
  2. Cook asparagus:
    • Heat olive oil in a large skillet over medium heat.
    • Add asparagus and cook for 3–4 minutes, until just tender. Remove and set aside.
  3. Cook shrimp:
    • In the same skillet, melt butter.
    • Add garlic and sauté for 30 seconds until fragrant.
    • Add shrimp and cook 1–2 minutes per side until pink and opaque.
  4. Add flavor:
    • Stir in lemon juice, lemon zest, and red pepper flakes.
    • Return asparagus to the skillet and toss to coat in the sauce.
  5. Serve:
    • Garnish with fresh parsley and serve hot — great with cauliflower rice or zucchini noodles.

Pro Tip: Don’t overcook the shrimp — they cook fast, and overcooking will make them rubbery.
