Beef Strips with Macaroni and Cheese, Potato Salad, and Sautéed Bell Peppers

🥩 Beef Strips

Ingredients:

  • 1½ lbs beef sirloin or flank steak, sliced into thin strips
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • ½ tsp paprika
  • 1 tbsp olive oil (for marinating)
  • 2 tbsp vegetable oil (for cooking)
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • Optional: 1 tsp cornstarch + ¼ cup beef broth (for a light gravy)

Instructions:

  1. Marinate Beef:
    • Combine beef strips with soy sauce, Worcestershire sauce, garlic powder, onion powder, paprika, black pepper, and olive oil.
    • Marinate for at least 30 minutes (or up to 8 hours in the fridge).
  2. Cook:
    • Heat vegetable oil in a large skillet over medium-high heat.
    • Add onions and garlic, sauté for 1–2 minutes.
    • Add beef strips in a single layer. Cook for 3–5 minutes until browned and cooked through.
    • Optional: Mix cornstarch with beef broth and stir into the pan to create a light gravy.

🧀 Macaroni and Cheese (Stovetop Style)

Ingredients:

  • 2 cups elbow macaroni
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk (preferably whole)
  • 2 cups shredded cheddar cheese
  • ½ cup mozzarella (optional for stretch)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika or mustard powder (optional)

Instructions:

  1. Cook Pasta:
    • Boil macaroni in salted water until al dente. Drain and set aside.
  2. Make Cheese Sauce:
    • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1–2 minutes.
    • Slowly whisk in milk, stirring constantly until smooth and slightly thickened.
    • Add cheeses, salt, pepper, and optional paprika/mustard. Stir until fully melted.
  3. Combine:
    • Add drained macaroni to the sauce. Stir until fully coated and creamy.
    • Keep warm until serving.

🥔 Classic Potato Salad

Ingredients:

  • 4 medium russet or Yukon Gold potatoes, peeled and cubed
  • ½ cup mayonnaise
  • 1 tbsp yellow mustard
  • 1 tsp vinegar or pickle juice
  • 2 hard-boiled eggs, chopped
  • 1 celery stalk, finely chopped
  • ¼ cup onion, finely chopped (or green onion)
  • Salt and black pepper to taste
  • Optional: ½ tsp paprika (for garnish)

Instructions:

  1. Cook Potatoes:
    • Boil potatoes in salted water until fork-tender (about 10–15 min). Drain and let cool.
  2. Make Dressing:
    • In a large bowl, mix mayo, mustard, vinegar, salt, and pepper.
  3. Combine:
    • Add potatoes, chopped eggs, celery, and onion. Mix gently.
    • Chill for at least 1 hour before serving. Sprinkle with paprika if desired.

🌶️ Sautéed Bell Peppers

Ingredients:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced (optional)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: pinch of garlic powder or Italian seasoning

Instructions:

  1. Sauté:
    • Heat oil in a skillet over medium-high heat.
    • Add bell peppers (and onion, if using). Cook for 5–7 minutes, stirring occasionally, until tender but still slightly crisp.
    • Season with salt, pepper, and optional seasonings.

🍽️ To Plate:

  • Scoop a portion of mac and cheese on one side.
  • Add a generous serving of potato salad.
  • Lay sautéed bell peppers beside or over the beef.
  • Pile on the flavorful, tender beef strips.
