Vegetable Pie Recipe
Ingredients
- 300 g broccoli
- 700 g cauliflower
- 150 g carrot
- 20 g parsley
- 3 eggs
- 400 ml milk
- 170 g flour
- 10 g baking powder
- 1 teaspoon salt
- Black pepper to taste
- Ground coriander to taste
- 10 g butter
- 100 g grated cheese
Directions
- In a pot with 1 liter of water, add 1 teaspoon of salt and bring to a boil.
- Wash the broccoli, clean it, and divide it into florets. Blanch in boiling water under a lid for 2 minutes, then remove with a slotted spoon and place in a bowl of cold water to stop the cooking process.
- Prepare an ovenproof dish with dimensions approximately 27×27 cm and grease it with butter.
- Wash the cauliflower, clean it, and divide it into small florets, then arrange it in the dish.
- Add the drained broccoli, grated carrot, and finely chopped parsley. Mix the vegetables to even them out.
- In a separate bowl, whisk the eggs with the milk, then add salt, black pepper, and ground coriander to taste.
- Gradually add the flour and baking powder, mixing with a whisk until a smooth mixture without lumps is obtained.
- Pour the mixture evenly over the vegetables in the ovenproof dish.
- Sprinkle the grated cheese on top.
- Bake in a preheated oven at 180°C for about 45-50 minutes, or until the pie gets a golden brown crust.
- Let it cool slightly before cutting and serving.
How to serve Vegetable Pie
You can serve the vegetable pie warm or at room temperature. It pairs well with a fresh green salad or a side of yogurt for dipping. You can also add more cheese on top when serving for an extra cheesy flavor.
