For the Salmon:

  • 4 salmon fillets (skin-on or off)
  • Salt & pepper to taste
  • 1 tbsp olive oil
  • 1 tbsp butter

For the Sauce:

  • 1 tbsp butter
  • 3–4 cloves garlic, minced
  • 8 oz mushrooms, sliced (cremini or button work great)
  • Β½ cup chicken broth (or dry white wine)
  • 1 cup heavy cream (or half & half for lighter version)
  • ΒΌ cup grated Parmesan cheese
  • 1 tsp fresh thyme (or Β½ tsp dried)
  • 1 tbsp lemon juice
  • Salt & pepper to taste
  • Fresh parsley or chives (for garnish)

  1. Sear the Salmon:
    • Pat salmon dry. Season with salt and pepper.
    • Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
    • Sear salmon for 4–5 minutes per side until golden and just cooked through. Remove and set aside.
  2. SautΓ© the Mushrooms:
    • In the same skillet, add 1 tbsp butter. SautΓ© mushrooms for 4–5 minutes until browned and softened.
    • Add garlic and cook for another 30 seconds until fragrant.
  3. Deglaze & Simmer:
    • Pour in chicken broth (or wine), scraping up any bits from the pan. Simmer 2–3 minutes to reduce slightly.
  4. Add Cream & Cheese:
    • Stir in heavy cream, Parmesan, thyme, and lemon juice.
    • Simmer for 3–4 minutes until sauce thickens slightly. Season with salt and pepper to taste.
  5. Finish with Salmon:
    • Return salmon fillets to the skillet. Spoon sauce and mushrooms over the top.
    • Simmer another 1–2 minutes to heat through.
  6. Serve:
    • Garnish with fresh parsley or chives.
    • Serve with mashed potatoes, rice, pasta, or crusty bread.
