Zesty Shrimp & Avocado Rice Bowls with Cilantro Lime Sauce

🛒 Ingredients

For the Shrimp:

  • 1 lb raw shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ¼ tsp cayenne (optional, for heat)
  • Salt & pepper to taste
  • Juice of ½ lime

For the Rice Base:

  • 2 cups cooked white or brown rice (or quinoa)
  • 1 tbsp lime juice
  • Zest of 1 lime
  • Salt to taste

Toppings:

  • 1 ripe avocado, diced or sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup corn (fresh, frozen, or canned)
  • ¼ cup red onion, thinly sliced
  • Fresh cilantro, chopped
  • Lime wedges (for serving)

🌿 Cilantro Lime Sauce:

  • ½ cup Greek yogurt (or sour cream)
  • ½ cup fresh cilantro leaves
  • Juice of 1 lime
  • 1 garlic clove
  • 1 tbsp olive oil
  • Salt to taste
  • 1–2 tsp honey or maple syrup (optional, to balance acidity)
  • 1–2 tbsp water (to thin, as needed)

Blend everything together in a food processor or blender until smooth and creamy. Adjust salt/lime to taste.


🔥 Instructions

  1. Cook the Shrimp:
    • Toss shrimp with olive oil, spices, salt, pepper, and lime juice.
    • Heat a skillet over medium-high heat. Cook shrimp for 2–3 minutes per side until pink and opaque. Remove from heat.
  2. Prepare the Rice:
    • Fluff cooked rice with a fork, stir in lime juice, zest, and a pinch of salt.
  3. Assemble the Bowls:
    • Add rice as the base.
    • Top with shrimp, avocado, tomatoes, corn, red onion, and cilantro.
  4. Drizzle with Sauce:
    • Spoon or drizzle cilantro lime sauce generously over the bowls.
  5. Serve:
    • Garnish with extra lime wedges and fresh cilantro. Serve warm or chilled!
