Vegan French Onion Soup Recipe (Serves 4)

π§ Ingredients:
For the Soup:
- 4 large yellow onions, thinly sliced
- 2 tbsp olive oil
- 1 tbsp vegan butter (optional for richness)
- 3 cloves garlic, minced
- 1 tbsp flour (all-purpose or gluten-free, for thickening)
- 1/2 cup dry white wine (optional but adds depth)
- 4 cups vegetable broth (low-sodium preferred)
- 1 tbsp soy sauce or tamari (for umami)
- 1 tsp balsamic vinegar
- Salt & black pepper to taste
- A few sprigs of fresh thyme or 1/2 tsp dried thyme
- 1 bay leaf
For Topping:
- Baguette slices (vegan-friendly)
- Vegan cheese (like shredded mozzarella or homemade cashew cheese)
πͺ Instructions:
- Caramelize the onions
Heat olive oil (and butter if using) in a large pot over medium heat. Add onions with a pinch of salt. Cook 30β40 minutes, stirring occasionally, until deep golden brown and caramelized. Donβt rush! - Add garlic & flour
Stir in garlic and cook for 1 minute. Sprinkle flour and stir constantly for 1β2 minutes to cook it out. - Deglaze
Pour in white wine (if using), scraping the bottom of the pot. Let it reduce for 2β3 minutes. - Simmer
Add vegetable broth, soy sauce, balsamic vinegar, thyme, bay leaf, salt, and pepper. Simmer uncovered for 20β25 minutes. Remove bay leaf before serving. - Prepare the topping
Toast the baguette slices. Optional: top with vegan cheese and broil for 2β3 minutes until melty. - Serve
Ladle soup into bowls, float the bread on top, and enjoy!
