Vegan French Onion Soup Recipe (Serves 4)

  • 4 cups vegetable broth (low-sodium preferred)

  • 1 tsp balsamic vinegar

  • A few sprigs of fresh thyme or 1/2 tsp dried thyme
  • 1 bay leaf

For Topping:

  • Baguette slices (vegan-friendly)
  • Vegan cheese (like shredded mozzarella or homemade cashew cheese)

  1. Caramelize the onions
    Heat olive oil (and butter if using) in a large pot over medium heat. Add onions with a pinch of salt. Cook 30–40 minutes, stirring occasionally, until deep golden brown and caramelized. Don’t rush!

    Stir in garlic and cook for 1 minute. Sprinkle flour and stir constantly for 1–2 minutes to cook it out.
  3. Deglaze
