Chocolate-covered almonds and cashews
Ingredients:
– 1 cup raw almonds
– 1 cup raw cashews
– 1 cup dark chocolate chips (or milk chocolate, if preferred)
– 1 tablespoon coconut oil (optional, for smoother chocolate)
– Sea salt (optional, for sprinkling)
Instructions:
1. Prepare the Nuts:
– Preheat your oven to 350°F (175°C).
– Spread the almonds and cashews on a baking sheet in a single layer.
– Roast them in the oven for about 10-12 minutes, or until they are lightly golden and fragrant. Keep an eye on them to prevent burning. Allow them to cool.
2. Melt the Chocolate:
– In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using).
– Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
3. Coat the Nuts:
– Add the cooled almonds and cashews to the melted chocolate. Stir until all the nuts are evenly coated.
4. Set the Chocolate:
– Line a baking sheet with parchment paper.
– Using a fork or a slotted spoon, lift the chocolate-covered nuts out of the bowl and place them on the parchment paper in a single layer.
– If desired, sprinkle a little sea salt on top for added flavor.
5. Cool and Harden:
– Allow the chocolate to set at room temperature, or place the baking sheet in the refrigerator for about 30 minutes to speed up the hardening process.
6. Store:
– Once the chocolate has hardened, transfer the chocolate-covered almonds and cashews to an airtight container. They can be stored at room temperature for up to two weeks.
